Winemaking Techniques
Grapes undergo strict manual selection to ensure only high-quality fruit reaches fermentation.
Fermentation occurs in temperature-controlled stainless steel tanks to preserve freshness.
Extended maceration on skins (7-14 days) ensures optimal tannin extraction and colour intensity.
The wine is aged with French oak chips for 6-12 months, contributing subtle oak influence without overpowering varietal character.
After barrel ageing, Vincognita is refined in bottle for an additional 12 months before release.
The Producer
Produced by Vincognita Wines. Established in 1997, Vincognita benefits from generations of viticulture experience combined with modern precision winemaking. The winery emphasises sustainable practices and terroir expression, earning respect in both domestic and international markets.
The Vineyard
Situated in the rolling hills of Southern Fleurieu, the vineyard enjoys a unique microclimate characterised by warm days and cool nights, cooler in the summer and warmer in winter, ideal for the grapes maturation. Soils are deep sandy loan and limestone beneath with optimal drainage, contributing to the wine’s structure and aromatic complexity. Vineyards are tended with rigorous care to maintain low yields and ensure grape quality.
